I personally am not one for breakfast foods, it takes to much effort and energy to get up super early in the morning to make food that may or may not taste good. Despite this, I do happen to love pancakes, and after many years of practice I have finally been able to get it down to a science. Pancakes may seem like a daunting and impossible breakfast food to some people, but the truth is they are exceptionally easy once you have the right ingredients.
For this recipe you will need,
3 cups of pancake mix (any pancake mix will do)
2 cups of milk
2 teaspoons of vanilla
1 teaspoon of cinnamon
1 stick of butter, or cooking spray
To start use either a stainless steel or iron skillet, and place on stovetop on low heat. While your pan is warming up, add all of your other ingredients, minus the butter, together in a mixing bowl and either hand stir or mix with a mixer. The important thing with pancakes is to make sure you have just the right amount of liquid, if you have too much milk the pancakes are paper thin and don’t stay together, not enough milk and they are too thick and don’t cook all the way. If you think your mixture is too thick just add another ½ cup of milk, if it’s too watery just add another cup of pancake mix, either way it is fixable.
Once your mixture is mixed evenly turn the heat on the stove to medium and spray your pan with either cooking oil or butter. It really doesn’t matter which you use, I prefer butter because it gives the pancakes a buttery taste, but you have to be careful because butter burns quickly. Use an ice cream scoop and scoop the mixture onto the greased frying pan. You will want to cook each side of the pancakes around two minutes depending on how thick your batter is. Once the pancakes are cooked on both sides I like to flip them again and let them sit just a couple of seconds to make sure the insides have a chance to cook as well.
Depending on how much pancake batter you made, it should take around 20-30 minutes, but once they are done it is worth every second.
