On the scale of awesome cookies, the snicker doodle is at the top of the list, slightly behind chocolate chip and peanut butter. It is light, fluffy, and sweet with a hint of cinnamon, which makes it the perfect treat. There are many methods to making and perfecting this delightful dessert, but this recipe here is one I have used multiple times. I can say without a doubt it’s one of my favorites. When I make the recipe, I usually double or triple it just because these cookies are so good, you will want to have extras on hand to enjoy them, but for this version below, the recipe makes around 2-3 dozen cookies.

To make this recipe you will need:

1 cup of margarine

1 cup of sugar

2/3 cup of brown sugar

2 eggs

1 teaspoon of vanilla

2 and ½ cups of flour (may need more if your dough is too wet)

½ teaspoon of salt

1 teaspoon cream of tartar (if you don’t have it don’t fret you can go without)

1 teaspoon baking soda

2-3 teaspoons of corn starch

1 teaspoon of cinnamon

2 tablespoons of sugar (or more depending on how much batter you have)

To start, pre-heat your oven to 350 degrees and pull out 3 mixing bowls 1 large, and 2 smaller. Take your wet ingredients (Margarine, eggs, and vanilla), place in mixing bowl, and mix well using either a hand mixer or an electric mixer. Most bakers will tell you it is better to use real butter, and while it does have a slightly better taste, it is very difficult to manage because it has to be a certain temperature before it becomes useable. For my purposes, baking margarine is the only way to go.

You want to make sure all of the wet ingredients are creamed together well before you add your dry ingredients, this will ensure that everything cooks evenly and your cookies are not lumpy. When done with that, you will want to add your sugar and brown sugar. Once they are added to the mixture, continue to mix them with your mixer until everything is well blended.

Next, you will add your flour, you will want to add a little bit at a time and stir it in either by hand or using your mixer. Add the first two cups to the mixture then save the last ½ cup for the end. Once your first two cups are in, pull out a bowl and put it to the side. Take your ½ cup of flour and add your baking soda, cream of tartar, salt, and corn starch together in a separate bowl and mix it all together evenly. This method is a little unconventional but I have found this is the easiest way to make sure all of the other dry ingredients get dispersed evenly. Once they are mixed together add them to your wet mixture and stir well so that everything is blended together nicely. Depending on your batter you may want to add a little bit more flour so that it isn’t as runny.

Once your mixture is ready, pull out a cookie sheet and spray it down with cooking spray or olive oil. Then, using a cookie scoop make little balls of cookie dough and roll them in the mixture of cinnamon and sugar. Once you have rolled them all, place them in the oven at 350 degrees for about 10-12 minutes depending on your oven. Once they are done, they should look something like the picture above.
