Gourmet with a microwave: Recipe edition

A sparkling cranberry mocktail

Are college students stuck with quick but average food? We think not. Creating mouth-watering food is not reserved for those with a full kitchen, raw talent or time on their hands. Gourmet food is possible with a microwave, and we have found some of the best on-the-go and student-friendly recipes to date.

 

1. Drizzled Granola Bars

Ingredients:
1 single serving cup of granola cereal
1-2 spoonfuls of peanut butter (based on preference)
1 packet of honey (you could buy an entire bottle of honey at Romo’s, but for the purpose of a single serving recipe, we asked a Romo’s employee for a couple honey packets, which cost 25 cents each.)

Directions:
Empty the granola cereal into a bowl. Spoon in the peanut butter and mix with a spoon. Spoon in honey and mix with a spoon. Once the mixture is all covered with peanut butter and honey, mold into your preferred size bar(s). If it is crumbling, add more peanut butter- the Elmer’s glue of the cooking world. Let the bars dry for at least five minutes.

2. Snicker’s Cheerios To-Go

Ingredients:
About 2 cups of Cheerios
2-3 spoonfuls of peanut butter
½ of honey packet
1 peanut butter Snickers Bar (or an original Snicker’s Bar)

Directions:

Place Cheerios on a plate or in a bowl (a flat surface seemed to work best). Add peanut butter and honey. Stir until evenly mixed. Cut or crumble the Snicker’s Bar into pieces (or melt it in the microwave to drizzle on top) and dispense on top of the Cheerios.

3. Emergency Peanut Butter Cheesecake

Ingredients:
At least ½ of a container of cream cheese (8 oz.)
4-5 spoonfuls of peanut butter
4 Oreos
1 Hershey’s chocolate bar
A small amount of water

Directions:
For the most convenience, mix the entire creation in a mug of your choosing. Keep in mind the size of the mug will affect the size of the cheesecake. Crush three Oreos on a plate or flat surface. Firmly press the Oreo crumbles on the bottom and lower sides of the mug. Slowly pour a couple drops of water onto the Oreo crust. Place peanut butter in the mug, place cream cheese in the mug and mix until the mixture is even. The cream cheese to peanut butter ratio is entirely up to you. Crumble remaining Oreo on top and (optional) melt the chocolate bar in the microwave to drizzle on top of everything.

4. Chocolate and Oreo-Covered Strawberries

Ingredients:
Strawberries
1-2 Oreos
1 Hershey’s chocolate bar

Directions:
Break up the chocolate bar and place in microwavable bowl. Microwave the chocolate for a total of 30 seconds, but after about every five seconds, take the bowl out and mix the chocolate. This may seem excessive, but trust me, so is scraping off burnt chocolate in your microwave. Cover or drizzle the chocolate on the strawberries. Crush the Oreos and crumble them on top.

5. Sparkling Cranberry Mocktail

Ingredients:
1 bottle of cranberry juice (You may use any juice you like.)
1 bottle of Sierra Mist, 7-Up or Sprite
3 strawberries
Ice or snow (Take advantage of the winter weather!)

Directions:
Fill the cup with the desired amount of ice or snow. Pour half of the cranberry juice in and then half of the soda. Keep alternating between juice and soda until the cup is full. Dice up two strawberries and top the drink with an entire strawberry on the side.
