With fall finally arriving, there is nothing more perfect than the taste of pumpkin. For this week’s post, I searched Pinterest to attempt something new- specifically, to make some scones. As an avid tea drinker and someone who enjoys all things pumpkin, this recipe was perfect. While my scones didn’t turn out exactly like the recipe on the website, they were still perfectly delicious after I added some ingredients. Read on for my version of the recipe:

Recipe

½ cup of margarine

1/3 cup of milk ( I used half skim milk and half heavy cream)

1 teaspoon of vanilla

1 can of pumpkin puree

1/3 cup of brown sugar

1 ½ cups of sugar

1 teaspoon of pumpkin spice

1 ½ teaspoons of baking powder

½ teaspoon of baking soda

3 cups of flour (may need more for kneading)

Start by preheating your oven to 375 degrees and then add all of your dry ingredients ( butter, milk, vanilla, and pumpkin). Mix well with either a spatula or hand mixer.

Once well mixed, add brown sugar, regular sugar, and pumpkin spice. In a separate bowl, add three cups of flour, baking soda, and the baking powder. Make sure all of the dry ingredients are well mixed before adding them to the wet mixture, once everything has been added you will then need to plac the flour on a flat, clean surface, and then add the dough to the flour so that you can knead it. You may need to add a couple of more cups of flour if your dough is not staying together well. Once you have kneaded the dough, flatten it into a circle and cut it into 12 triangular pieces, and then place it on a tray.

Put them in the oven and cook for 20-30 minutes. Once the scones come out of the oven, let them cool on a cookie rack. Sprinkle with sugar as they are cooling. Wait 10 minutes, and enjoy with your favorite warm beverage.

This recipe is fairly simple, but if you are still unsure you can head to willcookforsmiles.com and check out their version.
